1 medium head of cauliflower, riced (about 4 cups)

2 tablespoons sesame oil

1 cup peas and carrots, frozen or fresh

2 green onions, finely chopped

2 cloves garlic, minced

2 large eggs, beaten (or a flax egg for a vegan option)

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon ginger, freshly grated

Salt and pepper to taste

1/4 cup cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Begin by removing the leaves from the cauliflower and cutting it into florets. Pulse the florets in a food processor until they resemble rice grains. If you don’t have a food processor, you can grate the cauliflower using a box grater.

    Heat sesame oil in a large skillet or wok over medium-high heat. Once hot, add the minced garlic and grated ginger. Stir-fry for about 30 seconds until fragrant.

      Add the peas and carrots to the skillet and cook for 2-3 minutes until they begin to soften.

        Push the vegetables to one side of the skillet, and pour the beaten eggs into the other side. Scramble the eggs until cooked through, then mix with the vegetables.

          Add the riced cauliflower to the skillet, and pour the soy sauce over everything. Stir-fry for about 5-7 minutes, allowing the cauliflower to cook and absorb the flavors. Season with salt and pepper to taste.

            Remove the skillet from heat. Stir in chopped green onions and garnish with cilantro.

              Serve hot with lime wedges on the side for squeezing over the fried rice.
