2 pounds beef chuck roast, cut into small cubes

2 tablespoons olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

1 bell pepper (red or green), diced

2 tomatoes, diced

1 tablespoon ground cumin

1 tablespoon smoked paprika

1 teaspoon chili powder

1 teaspoon oregano

1 cup beef broth

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Tortillas (for serving)

Instructions
 

In a large skillet, heat the olive oil over medium-high heat. Add the chopped onions and sauté until translucent, about 3-4 minutes.

    Add the minced garlic and diced bell pepper to the skillet. Cook for another 2-3 minutes, stirring occasionally until softened.

      Introduce the beef cubes to the skillet, searing them until browned on all sides, about 6-8 minutes.

        Once the beef is browned, stir in the diced tomatoes, cumin, smoked paprika, chili powder, oregano, salt, and pepper. Mix well to combine.

          Pour the beef broth over the mixture, bring it to a boil, then reduce the heat to low. Cover and simmer for 1 hour, stirring occasionally until the beef is tender and the flavors meld together.

            Taste and adjust seasonings if needed before serving.

              Serve hot, garnished with fresh cilantro, alongside warm tortillas for a tasty wrap.
