Ingredients
  

4 large onions, thinly sliced

6 strips of bacon, diced

2 tablespoons olive oil

1 teaspoon brown sugar

1 teaspoon salt

1/2 teaspoon black pepper

8 oz cream cheese, softened

1 cup sour cream

1 cup shredded cheddar cheese

2 tablespoons fresh chives, chopped (for garnish)

Instructions
 

In a large skillet over medium heat, cook the diced bacon until crispy. Transfer the bacon to a plate lined with paper towels to drain, leaving the bacon fat in the skillet.

    Add olive oil to the skillet with the bacon fat and heat on medium. Add the sliced onions and sprinkle with salt and brown sugar. Stir occasionally for about 20-25 minutes or until the onions are deeply caramelized and golden brown.

      Once the onions are caramelized, remove from the heat and let cool slightly.

        In a mixing bowl, combine the softened cream cheese and sour cream. Mix well until smooth.

          Fold in the caramelized onions, cooked bacon, and shredded cheddar cheese until well combined.

            Transfer the dip to a serving dish and refrigerate for at least 30 minutes to allow the flavors to meld.
