1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

2 (8 oz) packages cream cheese, softened

¾ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup sour cream

½ cup caramel sauce (plus extra for drizzling)

Preheat your oven to 325°F (163°C) and line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.

    In a medium bowl, combine the graham cracker crumbs, melted butter, and ¼ cup of sugar. Mix until the crumbs are fully coated and the mixture is wet.

      Press the crumb mixture evenly into the bottom of the prepared baking pan to form a crust. Bake for 10 minutes and then let it cool slightly.

        In a large mixing bowl, beat the softened cream cheese with ¾ cup of sugar until smooth and creamy, about 3-4 minutes.

          Add the eggs one at a time, mixing until just incorporated after each addition. Scrape down the sides of the bowl as needed.

            Mix in the vanilla extract and sour cream until smooth.

              Gently swirl in the caramel sauce into the cheesecake mixture using a spatula—do not overmix.

                Pour the cheesecake mixture over the cooled crust and smooth the top with a spatula.

                  Bake for 30-35 minutes, or until the edges are set and the center is just slightly jiggly. Turn off the oven and crack the oven door, allowing the cheesecake to cool for 1 hour.

                    Once cooled, refrigerate the cheesecake bars for at least 4 hours or overnight for the best results.

                      Once chilled, lift the bars out of the pan using the overhanging parchment paper. Cut into squares and drizzle with extra caramel sauce.

                        Sprinkle a pinch of sea salt on top for a beautiful finish.
