For the Brownie Layer:

1 cup unsalted butter (2 sticks)

2 cups granulated sugar

4 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1 cup unsweetened cocoa powder

1/2 teaspoon baking powder

1/4 teaspoon salt

For the Cheesecake Layer:

16 oz cream cheese, softened

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

1/4 cup sour cream

1/4 cup heavy cream

For the Caramel Topping:

1 cup granulated sugar

6 tablespoons unsalted butter

1/2 cup heavy cream

Pinch of salt

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.

    Prepare the Brownie Layer:

      - In a medium saucepan, melt the butter over low heat.

        - Remove from heat and stir in the sugar until combined.

          - Beat in the eggs one at a time, then stir in the vanilla extract.

            - In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add this dry mixture to the wet ingredients until just combined.

              - Pour the brownie batter into the prepared springform pan, spreading it evenly. Bake for 20-25 minutes until a toothpick inserted in the center comes out with a few moist crumbs.

                Prepare the Cheesecake Layer:

                  - In a large mixing bowl, beat the softened cream cheese until smooth.

                    - Gradually add in the sugar and beat until fluffy.

                      - Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, sour cream, and heavy cream until the mixture is well blended.

                        - Once the brownie layer is done baking, pour the cheesecake batter over the brownie layer and spread evenly.

                          Bake the Cheesecake:

                            - Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center slightly jiggles.

                              - Turn off the oven and let the cheesecake cool in the oven with the door ajar for about an hour. Then, refrigerate for at least 4 hours or overnight for best results.

                                Make the Caramel Sauce:

                                  - In a saucepan over medium heat, melt the sugar until it starts to turn a golden brown color, stirring constantly to prevent burning.

                                    - Once melted, carefully whisk in the butter until fully incorporated.

                                      - Slowly add the heavy cream while whisking continuously (the mixture will bubble up).

                                        - Stir in a pinch of salt and let the caramel simmer for another minute before removing from heat. Allow to cool slightly.

                                          Assemble and Serve:

                                            - Once the cheesecake is fully chilled, carefully remove it from the springform pan.

                                              - Drizzle the cooled caramel sauce over the top of the cheesecake, allowing it to drip down the sides.

                                                - For a decorative touch, you can sprinkle some flaky sea salt on top of the caramel.
