Caramel Apple Walnut Cookies

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1 cup peeled and diced apples (preferably Granny Smith)

1 cup chopped walnuts

1/2 cup caramel sauce (store-bought or homemade)

Instructions
 

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy.

      Beat in the egg and vanilla extract until well combined.

        In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add this dry mixture to the wet ingredients, stirring until just combined.

          Gently fold in the diced apples and chopped walnuts until evenly distributed throughout the dough.

            Using a cookie scoop or tablespoon, drop heaping spoonfuls of cookie dough onto the prepared baking sheets, leaving space between each cookie.

              Drizzle a small amount of caramel sauce over the top of each cookie dough mound.

                Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.

                  Optional: Drizzle additional caramel sauce over the cooled cookies for an extra treat!
