Ingredients

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

1 cup granulated sugar, divided

3 (8 oz) packages cream cheese, softened

3 large eggs

1 teaspoon vanilla extract

1 teaspoon cinnamon

2 cups peeled and diced apples (Granny Smith or Honeycrisp)

½ cup caramel sauce (plus extra for drizzling)

¼ cup chopped pecans (optional)

Instructions

Prepare the Crust: Preheat your oven to 325°F (160°C). In a medium bowl, mix the graham cracker crumbs, melted butter, and ¼ cup of sugar until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake for 10 minutes. Remove from oven and set aside to cool.

Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth, about 2-3 minutes. Gradually add the remaining ¾ cup sugar, and continue mixing until fully incorporated and creamy.

Add Eggs and Flavorings: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and cinnamon until fully blended.

Incorporate Apples and Caramel: Gently fold in the diced apples and ½ cup of caramel sauce into the cream cheese mixture, being careful not to overmix.

Bake the Cheesecake: Pour the cheesecake filling over the prepared crust, smoothing the top with a spatula. Bake in preheated oven for 50-60 minutes, or until the center is set and only slightly jiggly. Turn the oven off and let the cheesecake cool inside for about an hour.

Chill: After cooling, cover the cheesecake with plastic wrap and refrigerate for at least 4 hours or overnight to firm up completely.

Serve: Before serving, drizzle additional caramel sauce over the top and sprinkle with chopped pecans if desired. Slice and enjoy!
