2 slices of ciabatta bread

1 medium ripe tomato, sliced

1 ball fresh mozzarella cheese, sliced

Fresh basil leaves (about 6-8)

1 tablespoon balsamic glaze

1 tablespoon extra virgin olive oil

Salt and freshly cracked black pepper, to taste

Optional: Arugula for an extra peppery crunch

Instructions
 

Preheat a grill pan or a sandwich press on medium heat.

    Drizzle the olive oil on one side of each slice of ciabatta bread.

      On the non-oiled side of one slice, layer the tomato slices followed by the fresh mozzarella slices.

        Add the fresh basil leaves on top of the mozzarella and drizzle with balsamic glaze.

          Sprinkle salt and freshly cracked black pepper over the layers for seasoning.

            If you're using arugula, place a handful on top of the basil leaves.

              Top with the second slice of ciabatta, oiled side up, to create a sandwich.

                Place the sandwich on the grill pan or in the sandwich press. Cook for about 3-4 minutes on each side, or until the bread is golden brown and the mozzarella starts to melt.

                  Once cooked, carefully remove from heat and let it sit for a minute before cutting.

                    Slice the sandwich in half diagonally for a beautiful presentation.
