2 cans (15 oz each) refried beans

1 tablespoon olive oil

1 small onion, finely chopped

2 garlic cloves, minced

1 jalapeño, deseeded and finely chopped

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 cup diced tomatoes (fresh or canned)

Salt and pepper to taste

1 cup shredded cheddar cheese

½ cup sour cream or Greek yogurt (optional)

Fresh cilantro, chopped for garnish

Lime wedges for serving

Instructions
 

In a large skillet, heat olive oil over medium heat.

    Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes.

      Stir in the minced garlic and chopped jalapeño, cooking for another 2 minutes until fragrant.

        Add the cumin and smoked paprika to the skillet, stirring for about 30 seconds to release the spices' aroma.

          Add the canned refried beans and the diced tomatoes to the skillet, stirring until well combined.

            Season with salt and pepper to taste and continue to cook until the beans are heated thoroughly, about 5 minutes.

              Remove from heat and sprinkle the shredded cheddar cheese on top, allowing it to melt slightly from the residual heat.

                Serve warm, topped with sour cream or Greek yogurt, chopped cilantro, and lime wedges on the side for an extra zing.
