Instructions
Line a baking sheet with parchment paper, creating a smooth surface for the bark.
In a microwave-safe bowl, combine the white chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until the chocolate is melted and smooth.
Once melted, add in the crushed Oreos and half of the crushed candy canes. Stir until evenly coated.
Pour the Oreo and white chocolate mixture onto the prepared baking sheet. Use a spatula to spread it into an even layer, about 1/4 inch thick.
Sprinkle the remaining crushed candy canes over the top, followed by the mini chocolate chips if using. Finish with a light sprinkle of sea salt to enhance the flavors.
Refrigerate the bark for about 1-2 hours, or until completely set.
Once set, break the bark into pieces and enjoy!
