Cajun Sausage and Rice Skillet

1 lb andouille sausage, sliced

1 cup long-grain rice

1 onion, diced

3 cloves garlic, minced

1 bell pepper, diced (red or green)

1 can (14.5 oz) diced tomatoes, undrained

2 cups chicken broth

1 teaspoon Cajun seasoning

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup frozen peas

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the sliced andouille sausage and cook until browned, about 5-6 minutes. Remove the sausage from the skillet and set aside.

    In the same skillet, add diced onion and bell pepper. Sauté for about 3-4 minutes until the vegetables start to soften.

      Stir in the minced garlic and cook for an additional minute until fragrant.

        Add the rice to the skillet, stirring well to combine with the vegetables. Toast the rice in the skillet for about 2 minutes, stirring occasionally.

          Pour in the diced tomatoes (with juices), chicken broth, Cajun seasoning, smoked paprika, salt, and pepper. Stir to combine all ingredients.

            Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for about 15-20 minutes, or until the rice is cooked and has absorbed most of the liquid.

              Once the rice is tender, add the cooked sausage and frozen peas. Stir gently to combine, cover, and let it heat through for another 5 minutes.

                Remove from heat and let it sit for a few minutes before serving.
