Ingredients

2 salmon fillets (about 6 oz each)

1 cup shrimp, peeled and deveined

2 tablespoons Cajun seasoning

1 tablespoon olive oil

2 tablespoons butter

1 small onion, finely chopped

2 cloves garlic, minced

1 cup heavy cream

½ cup chicken broth

1 cup spinach, fresh

1 cup cherry tomatoes, halved

Salt and black pepper to taste

Fresh parsley, for garnish

Instructions

In a small bowl, mix the salmon fillets and shrimp with Cajun seasoning, ensuring even coating. Set aside to marinate for about 15 minutes.

Heat olive oil in a large skillet over medium-high heat. Add the seasoned salmon fillets and cook for 4-5 minutes on each side until cooked through and golden brown. Remove and set aside.

In the same skillet, add butter and reduce heat to medium. Sauté the onion until translucent, about 3-4 minutes.

Add the minced garlic and cook for an additional minute until fragrant.

Pour in the chicken broth and bring it to a simmer, scraping any browned bits from the bottom of the pan.

Stir in the heavy cream and let it simmer for about 5 minutes, allowing it to thicken slightly.

Add the spinach and cherry tomatoes, cooking until the spinach wilts and the tomatoes are slightly softened, about 2-3 minutes.

Season the sauce with salt and black pepper to taste.

Gently nestle the shrimp and salmon back into the skillet, allowing them to heat through in the creamy sauce for about 2 minutes.

Serve hot, garnished with fresh parsley.

                      Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 2

                        - Presentation Tips: Serve in a shallow bowl with the creamy sauce spooned over the fish and seafood. Garnish with a sprinkle of fresh parsley and a lemon wedge on the side for an extra pop of color and flavor.
