2 boneless, skinless chicken breasts

2 tablespoons olive oil

2 teaspoons taco seasoning

Salt and pepper to taste

1 cup brown rice (or quinoa)

1 ¾ cups low-sodium chicken broth

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 avocado, sliced

½ cup Greek yogurt or sour cream

¼ cup fresh cilantro, chopped

1 lime, cut into wedges

Instructions
 

Cook the Chicken: In a medium bowl, rub the chicken breasts with olive oil, taco seasoning, salt, and pepper until well coated.

    Sear the Chicken: Heat a skillet over medium heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Remove from the skillet and let rest before slicing.

      Prepare the Rice: In a pot, bring chicken broth to a boil. Add the brown rice, reduce the heat to low, cover, and let simmer for 35-40 minutes (or according to package instructions) until tender.
