Ingredients

1 large loaf of crusty baguette or ciabatta, sliced into 1/2 inch pieces

8 oz fresh burrata cheese

2 cups cherry tomatoes, halved

1 clove garlic, minced

1 tablespoon balsamic vinegar

1/4 cup fresh basil leaves, plus more for garnish

1/3 cup extra virgin olive oil, divided

Salt and freshly cracked black pepper to taste

Optional: A pinch of chili flakes for heat

Instructions

Prepare the Basil Oil: In a small food processor or blender, combine the fresh basil leaves with 1/4 cup of olive oil and a pinch of salt. Blend until smooth. Strain through a fine mesh sieve into a small bowl to remove any solids. Set aside.

Toast the Bread: Preheat your oven to 400°F (200°C). Arrange the sliced bread on a baking sheet in a single layer. Drizzle with 2 tablespoons of olive oil and sprinkle with salt. Bake for about 8-10 minutes or until golden and crispy.

Prepare the Tomato Topping: In a mixing bowl, combine the halved cherry tomatoes, minced garlic, balsamic vinegar, salt, and pepper to taste. If you like a bit of heat, add a pinch of chili flakes. Let it sit for about 10 minutes to allow the flavors to meld.

Assemble the Bruschetta: Once the bread is toasted, allow it to cool slightly. Place a generous spoonful of the tomato mixture on top of each toasted bread slice. Tear the burrata into pieces and place it over the tomatoes.

Drizzle and Serve: Generously drizzle the basil oil over the assembled bruschetta. Garnish with additional fresh basil leaves.
