Ingredients

1 lb ground beef (80/20 blend)

1 cup mushrooms, finely chopped

1/4 cup onions, finely diced

2 cloves garlic, minced

1/2 teaspoon Worcestershire sauce

1 teaspoon salt

1/2 teaspoon black pepper

4 slices Swiss cheese

4 whole wheat burger buns

1 cup baby spinach

1 ripe tomato, sliced

1 avocado, sliced

Olive oil for sautéing

Instructions

In a skillet over medium heat, add a drizzle of olive oil. Once heated, add the chopped mushrooms, onions, and minced garlic. Sauté for about 5-7 minutes until the mushrooms are tender and the onions are translucent. Remove from the skillet and let cool slightly.

In a mixing bowl, combine the ground beef, sautéed mushroom mixture, Worcestershire sauce, salt, and black pepper. Mix gently until well combined; avoid overworking the meat.

Divide the meat mixture into four equal portions, shaping them into patties about 1/2 inch thick. Make a small indentation in the center of each patty (this helps them cook evenly).

Heat the skillet again over medium-high heat. Cook the patties for about 4-5 minutes on one side, then flip them. Immediately place a slice of Swiss cheese on each patty and cover the skillet to melt the cheese, cooking for an additional 4-5 minutes for medium doneness.

While the patties are cooking, toast the whole wheat burger buns in a separate pan or in the oven until golden brown.

To assemble the burgers, place a handful of baby spinach on the bottom half of each bun, followed by the cheese-covered patty, a slice of tomato, and a few slices of avocado. Top with the other half of the bun.

Serve with your favorite sides, like sweet potato fries or a simple green salad.
