1 lb chicken breast, cut into bite-sized pieces

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

1 cup hot sauce (like Frank's RedHot)

2 tablespoons unsalted butter, melted

Fresh parsley, chopped (for garnish)

Instructions
 

In a large bowl, mix the hot sauce with the melted butter until well combined. Set aside for coating the nuggets later.

    In a shallow dish, combine the flour with garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper.

      In another bowl, whisk the eggs until well beaten.

        In a third bowl, place the breadcrumbs.

          Dip each piece of chicken into the flour mixture, coating it completely and shaking off any excess.

            Next, dip the floured chicken in the beaten eggs, ensuring it’s well-coated and then transfer it to the breadcrumbs. Press the breadcrumbs onto the chicken to help them stick.

              Preheat the air fryer (if using) to 400°F (200°C) or heat a deep fryer with oil to 350°F (175°C).

                If using an air fryer, place the nuggets in a single layer, spray lightly with cooking spray, and cook for 10-12 minutes until golden and cooked through, shaking the basket halfway. If using a deep fryer, fry in batches for about 4-5 minutes until the nuggets are golden brown and cooked through.

                  Once cooked, immediately toss the hot chicken nuggets in the prepared hot sauce mixture until evenly coated.

                    Serve the buffalo chicken nuggets hot, garnished with fresh chopped parsley.
