4 large croissants, torn into pieces

6 large eggs

2 cups milk

1 cup shredded cheese (mix of cheddar and Gruyère)

1 cup cooked breakfast sausage, crumbled (or diced bacon)

1 small onion, diced

1 bell pepper, diced (any color)

1 cup fresh spinach, chopped

1 teaspoon dried thyme

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

Preheat your oven to 350°F (175°C) and grease a large baking dish (about 9x13 inches) with butter or cooking spray.

    In a skillet, sauté the diced onion and bell pepper over medium heat until the onion is translucent, about 5-7 minutes. Add the chopped spinach and cook until wilted, about 2 minutes. Remove from heat and set aside.

      In a large mixing bowl, whisk together the eggs, milk, dried thyme, garlic powder, salt, and pepper.

        In the prepared baking dish, layer half of the croissant pieces, followed by half of the sausage or bacon, sautéed vegetables, and half of the cheese. Repeat the layers with the remaining ingredients: croissants, sausage or bacon, vegetables, and top with the remaining cheese.

          Pour the egg and milk mixture evenly over the layers, pressing down gently to ensure the croissants absorb the liquid.

            Allow the strata to rest for about 15 minutes to soak up the egg mixture.

              Bake in the preheated oven for 35-40 minutes, or until the strata is puffed and golden brown on top and a knife inserted in the center comes out clean.

                Let the strata cool for a few minutes before slicing.

                  Garnish with fresh parsley before serving.
