1 tablespoon cornstarch

1 teaspoon lemon juice

Prepare the Blueberry Filling: In a medium saucepan, combine the blueberries, granulated sugar, cornstarch, lemon juice, vanilla extract, and cinnamon. Cook over medium heat, stirring gently until the mixture begins to bubble and thicken. Remove from heat and let cool.

    Make the Cookie Dough: In a mixing bowl, cream together the softened butter and remaining granulated sugar until light and fluffy. Beat in the egg and almond extract until well combined.

      Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
