1 cup all-purpose flour

1/2 cup whole wheat flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup granulated sugar

1/4 cup brown sugar

1/2 cup unsalted butter, melted

2 large eggs

1 cup plain Greek yogurt

1 teaspoon vanilla extract

1 cup fresh blueberries

1/2 cup cream cheese, softened and cubed

1 tablespoon lemon zest (optional)

Additional sugar for sprinkling on top (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.

    In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt.

      In another bowl, combine the granulated sugar, brown sugar, and melted butter, stirring until well mixed.

        Add the eggs, Greek yogurt, and vanilla extract to the butter mixture, mixing until smooth.

          Gradually add the dry ingredients into the wet mixture, stirring just until combined; do not overmix.

            Gently fold in the blueberries and lemon zest (if using) into the batter.

              Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.

                Distribute the cubed cream cheese evenly on top of each muffin, pressing them slightly into the batter.

                  (Optional) Sprinkle a little extra sugar on top of each muffin for a sweet crunch.

                    Bake in the preheated oven for 18-22 minutes or until a toothpick inserted into the center of a muffin comes out clean.

                      Once done, remove from the oven and let cool in the pan for about 5 minutes before transferring to a wire rack to cool completely.
