Blueberry Breakfast Quesadilla

Ingredients
  

4 whole wheat tortillas

1 cup fresh blueberries

1 cup ricotta cheese

1 tablespoon honey

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/2 cup shredded mozzarella cheese

2 tablespoons butter (for frying)

Fresh mint leaves (for garnish, optional)

Instructions
 

In a medium bowl, combine the ricotta cheese, honey, vanilla extract, and cinnamon. Mix until smooth and well combined.

    Lay a tortilla on a clean surface. Spread a generous layer of the ricotta mixture evenly across half of the tortilla.

      Scatter a portion of fresh blueberries on top of the ricotta mixture, followed by a sprinkle of shredded mozzarella cheese.

        Fold the tortilla in half to create a semicircle enclosing the filling.

          Heat a non-stick skillet over medium heat and add 1 tablespoon of butter. Once melted, place the quesadilla in the skillet.

            Cook for about 3-4 minutes until the bottom is golden brown, then carefully flip the quesadilla using a spatula. Add the remaining tablespoon of butter, if needed, and cook for an additional 3-4 minutes on the other side.

              Remove from the skillet and let it cool slightly before cutting into wedges.

                Repeat the process with the remaining tortillas and filling ingredients.

                  Serve warm, garnished with fresh mint leaves if desired.
