Ingredients

2 cups all-purpose flour

1 cup granulated sugar

1/2 cup unsalted butter, softened

1 cup buttermilk (or substitute with milk + 1 tsp lemon juice)

3 large eggs

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon vanilla extract

1/4 teaspoon salt

2 cups fresh blueberries (plus extra for garnish)

1 tablespoon lemon zest

1/2 teaspoon ground cinnamon (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.

Add Eggs and Vanilla: Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon (if using).

Combine Ingredients: Gradually add the dry ingredients to the butter and sugar mixture, alternating with the buttermilk. Begin and end with the dry mixture for better incorporation.

Fold in Blueberries: Gently fold in the fresh blueberries and lemon zest, being careful not to break the berries.

Pour into Pan: Pour the batter into the prepared baking pan, smoothing out the top with a spatula. Sprinkle a few extra blueberries on top for decoration.

Bake: Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve: Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Slice and Enjoy: Cut into squares and serve warm or at room temperature. Optional: drizzle with a simple glaze made from powdered sugar and a splash of lemon juice for added sweetness.
