4 salmon fillets (6 oz each)

2 cups fresh spinach, chopped

1/2 cup grated Parmesan cheese

1/2 cup cream cheese, softened

3 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust for spice preference)

Salt and pepper, to taste

1 lemon, sliced (for garnish)

Prepare the Salmon: Preheat your oven to 375°F (190°C). Using a sharp knife, cut a pocket into each salmon fillet carefully, making sure not to cut all the way through. This will be for stuffing.

    Make the Spinach Filling: In a medium skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the chopped spinach and sauté until wilted (about 2-3 minutes). Remove from heat and let cool slightly.

      Combine Ingredients for Filling: In a mixing bowl, combine the cooked spinach, Parmesan cheese, cream cheese, garlic powder, onion powder, salt, and pepper. Mix well until fully combined.

        Stuff the Salmon: Take the spinach mixture and generously stuff each salmon pocket with it, pressing down slightly so it holds.

          Season the Salmon: In a small bowl, mix the smoked paprika, cayenne pepper, and a bit of salt and pepper. Rub this spice mixture evenly over the outside of each salmon fillet.

            Cook the Salmon: In an oven-safe skillet, heat the remaining olive oil over medium-high heat. Once hot, place the stuffed salmon fillets in the skillet, searing each side for about 3 minutes until golden brown. Then transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.

              Serve: Remove the stuffed salmon from the oven and let it rest for a few minutes before serving.
