4 salmon fillets (6 oz each)

2 cups fresh spinach, chopped

1 cup ricotta cheese

½ cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon lemon zest

1 teaspoon thyme (fresh or dried)

1 teaspoon paprika

1 teaspoon cayenne pepper

Salt and pepper to taste

2 tablespoons olive oil

Prepare the Filling: In a skillet over medium heat, add 1 tablespoon of olive oil. Once heated, sauté the minced garlic until fragrant (about 1 minute). Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

    Mix the Stuffing: In a bowl, combine the sautéed spinach, ricotta cheese, grated Parmesan, lemon zest, thyme, salt, and pepper. Mix until thoroughly combined and set aside.

      Prepare the Salmon: Preheat the oven to 375°F (190°C). Carefully make a slit in the center of each salmon fillet, creating a pocket for the filling.

        Stuff the Fillets: Generously spoon the spinach and cheese mixture into each salmon pocket. Press gently to ensure it's packed well.

          Season the Salmon: In a small bowl, mix together the paprika, cayenne pepper, salt, and pepper. Rub this spice mixture all over the outside of each stuffed salmon fillet.
