4 salmon fillets (about 6 oz each)

2 cups fresh spinach, chopped

1/2 cup cream cheese, softened

1/4 cup grated Parmesan cheese

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon cayenne pepper

1 teaspoon dried thyme

1 tablespoon olive oil

Salt and pepper to taste

Lemon wedges for serving

Prepare the Stuffing: In a large skillet over medium heat, add the olive oil and the minced garlic. Sauté for about 1 minute until fragrant.

    Add Spinach: Add the chopped spinach to the skillet and cook for about 3-4 minutes, until wilted.

      Mix Creamy Filling: In a bowl, combine the sautéed spinach and garlic with cream cheese, Parmesan cheese, onion powder, salt, and pepper. Mix well until smooth and creamy. Set aside.

        Prepare the Salmon: Preheat your oven to 400°F (200°C). Prepare the salmon fillets by carefully cutting a pocket in the side of each fillet without cutting all the way through.

          Stuff the Fillets: Generously fill each salmon fillet pocket with the creamy spinach mixture.

            Blacken the Salmon: In a small bowl, mix smoked paprika, cayenne pepper, thyme, salt, and pepper. Coat the outside of each stuffed salmon fillet with the spice mixture.

              Cook the Salmon: Heat a non-stick oven-safe skillet over medium-high heat. Sear the salmon fillets for 3-4 minutes on each side until nicely browned.

                Bake: Transfer the skillet to the preheated oven and bake for an additional 10 minutes or until the salmon is cooked through and flakes easily with a fork.

                  Serve: Carefully remove the salmon from the oven. Serve hot with lemon wedges on the side for an extra tangy flavor.
