2 cups shredded birria beef (slow-cooked and seasoned)

4 slices of sourdough bread

1 cup Oaxaca cheese (or mozzarella)

1 cup cheddar cheese, shredded

1 tablespoon unsalted butter

1 tablespoon olive oil

1 small red onion, thinly sliced

1 jalapeño, sliced (optional, for heat)

Fresh cilantro, chopped, for garnish

Salsa or consomé, for dipping

Instructions
 

Prepare the Beef: Ensure your shredded birria beef is warm and flavorful. If preferred, lightly sauté it with a bit of consomé in a pan for added moisture and flavor. Set aside.

    Toast the Onions: In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced red onion and jalapeño if using. Sauté until soft and slightly caramelized, about 5-7 minutes. Remove and set aside.

      Assemble the Sandwich: Take 2 slices of sourdough bread. On the bottom slice, layer half of the Oaxaca cheese, followed by a generous portion of the shredded birria beef, sautéed onions, and then top with the remaining Oaxaca cheese. Place the second slice of sourdough on top to form a sandwich.

        Grill the Sandwich: In the same skillet, melt the butter over medium heat. Carefully place the sandwich in the skillet. Grill for about 4-5 minutes on one side or until golden brown and crispy.

          Flip and Finish: After flipping the sandwich, sprinkle some cheddar cheese on top of the sandwich before cooking the other side. Grill for another 4-5 minutes until the bread is crisp, and the cheeses are melted.
