1 pound smoked sausage, sliced into thick coins

2 pounds baby potatoes, halved

1 cup green bell pepper, diced

1 cup onion, diced

4 cloves garlic, minced

3 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the halved baby potatoes, diced green bell pepper, diced onion, and minced garlic.
