Ingredients

2 boneless, skinless chicken breasts

8 ounces penne pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: 1 cup cherry tomatoes, halved

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the penne according to package instructions until al dente. Drain and set aside. Reserve ½ cup of pasta water.

Sear the Chicken: While the pasta is cooking, season the chicken breasts with salt, pepper, and Italian seasoning. In a large skillet over medium-high heat, add the olive oil. Once hot, add the chicken breasts and cook for about 6-7 minutes per side, or until golden brown and cooked through. Remove from the skillet, let rest, and slice into strips.

Sauté the Garlic: In the same skillet, add the minced garlic and sauté for about 30 seconds or until fragrant.

Make the Sauce: Pour in the chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer, then add the Parmesan cheese and stir until fully melted and creamy. If the sauce is too thick, add reserved pasta water gradually until you reach desired consistency.

Combine Everything: Add the cooked penne pasta to the skillet along with the sliced chicken. If using, add the cherry tomatoes. Toss everything together until well combined and heated through, about 2-3 minutes. Adjust seasoning with salt and pepper as needed.

Serve: Divide the pasta into bowls and garnish with fresh parsley and additional grated Parmesan if desired.
