1 cup fresh spinach, roughly chopped

1/2 cup Italian dressing (store-bought or homemade)

1 teaspoon dried oregano

Salt and pepper to taste

Instructions

Cook the Pasta: In a large pot of salted boiling water, add the rotini or fusilli pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

Prepare the Ingredients: While the pasta is cooking, chop and prepare the cherry tomatoes, mozzarella balls, pepperoni, olives, red bell pepper, red onion, and spinach.

Mix Dressing: In a small bowl, whisk together the Italian dressing, dried oregano, salt, and pepper. Adjust seasoning to your taste.

Combine: In a large mixing bowl, combine the cooled pasta with all the prepared ingredients: cherry tomatoes, mozzarella, pepperoni, olives, red bell pepper, red onion, and spinach.

Dress the Salad: Pour the dressing over the pasta salad and gently toss until everything is evenly coated.

Chill: Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld.

Serve: Before serving, give the salad a gentle toss and garnish with fresh basil leaves.

                Prep Time: 20 minutes | Total Time: 50 minutes | Servings: 6-8
