Ingredients
  

1 cup mixed berries (strawberries, raspberries, blueberries)

2 tablespoons sugar or honey

1 tablespoon fresh lemon juice

1 cup club soda or sparkling water

1/2 cup heavy cream or half-and-half

Ice cubes

Fresh mint leaves (for garnish)

Instructions
 

In a small saucepan over medium heat, combine the mixed berries and sugar or honey. Stir gently until the berries start to break down and release their juices, about 5-7 minutes.

    Remove the saucepan from heat and let the berry mixture cool slightly. Then, strain through a fine mesh sieve to separate the liquid from the pulp. Discard the pulp and set the berry syrup aside.

      In a tall glass, fill it halfway with ice cubes. Pour about 2-3 tablespoons of the berry syrup over the ice.

        Slowly pour in the club soda or sparkling water, allowing it to mix gently with the syrup. Stir lightly if needed to combine.

          In a separate bowl, whisk the heavy cream or half-and-half until it starts to thicken slightly but is not fully whipped. This should take about 2-3 minutes.

            Drizzle the whipped cream over the top of the soda layer, creating a creamy cloud effect.

              Optional: Add a splash more of the berry syrup on top, and garnish with fresh mint leaves.
