Ingredients

8 ounces elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 cup beer (preferably a mild lager or amber ale)

1 cup milk

2 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

8 ounces sirloin steak, cut into bite-sized pieces

1 tablespoon olive oil

Fresh parsley, chopped for garnish

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce: In the same pot, melt the butter over medium heat. Stir in the flour, whisking constantly for about 2 minutes until golden.

Add Beer and Milk: Gradually add the beer while whisking, followed by the milk. Continue whisking until the mixture thickens and bubbles, about 5 minutes.

Cheese It Up: Lower the heat and stir in the cheddar and Gruyère cheese until melted and creamy. Add garlic powder, onion powder, smoked paprika, and season with salt and pepper to taste.

Combine with Pasta: Add the cooked macaroni to the cheese sauce, stirring until well coated. Keep on low heat while you prepare the steak bites.

Cook the Steak Bites: In a separate skillet, heat the olive oil over medium-high heat. Season the steak pieces with salt and pepper. Add them to the skillet and sear for 3-4 minutes on each side until browned and cooked to your preference.

Combine and Serve: Add the cooked steak bites to the macaroni and cheese mixture, gently folding them in.

Garnish: Serve hot, garnished with chopped fresh parsley for a pop of color.
