2 tablespoons olive oil

1 cup cremini mushrooms, sliced

2 cloves garlic, minced

1 shallot, finely chopped

1 cup heavy cream

1 tablespoon Dijon mustard

1 teaspoon fresh thyme leaves

1 tablespoon fresh parsley, chopped (for garnish)

Season the Steaks: Pat the beef tenderloins dry with paper towels, then season them generously with salt and black pepper on both sides. Allow them to sit at room temperature for about 15 minutes.

    Cook the Steaks: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the tenderloin steaks and sear them for about 3-4 minutes on each side (for medium-rare) or until they reach your desired degree of doneness. Transfer the steaks to a plate and cover loosely with aluminum foil to rest.
