2 tablespoons olive oil

1 medium onion, finely chopped

2 garlic cloves, minced

8 oz (225g) mushrooms, sliced

1 cup beef broth (low sodium)

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 cup sour cream

Salt and black pepper to taste

1 tablespoon fresh parsley, chopped (for garnish)

8 oz (225g) egg noodles or pasta of choice

Instructions
 

Begin by cooking the egg noodles according to the package instructions. Drain and set aside.

    In a large skillet over medium-high heat, heat the olive oil. Once hot, add the sliced beef, season with salt and pepper, and cook for about 3-4 minutes or until browned. Remove the beef from the skillet and set aside.

      In the same skillet, add the chopped onion and sauté for 2-3 minutes until softened. Add the minced garlic and cook for another minute until fragrant.

        Add the sliced mushrooms to the skillet, cooking until they release their moisture and turn golden brown (around 5-6 minutes).

          Pour in the beef broth, Worcestershire sauce, and Dijon mustard. Stir to combine and bring to a simmer; let cook for about 4-5 minutes to reduce slightly.

            Reduce the heat to low. Stir in the sour cream until smooth. Then, return the cooked beef to the skillet and mix well until everything is heated through. Adjust seasoning with salt and pepper if needed.
