1 medium butternut squash, peeled and diced

2 beef sausages, casings removed and crumbled

1 medium onion, chopped

2 cloves garlic, minced

3 medium carrots, diced

3 cups vegetable broth

1 cup coconut milk

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro, for garnish (optional)

Instructions
 

Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Add the minced garlic and crumbled beef sausages to the pot. Cook until the sausages are browned and cooked through, stirring occasionally, about 7-10 minutes.

      Stir in the diced butternut squash and carrots, cooking for another 5 minutes until slightly softened.

        Sprinkle the ground cumin and smoked paprika over the vegetables and sausage mixture, stirring until well combined and fragrant.

          Pour in the vegetable broth, bringing the mixture to a boil. Reduce the heat to low and let it simmer for about 20-25 minutes, or until the butternut squash is tender.

            Once cooked, carefully puree the soup using an immersion blender until smooth (or transfer to a blender in batches).

              Stir in the coconut milk, seasoning with salt and pepper to taste. Heat through for an additional 5 minutes on low heat.

                Serve hot, garnished with fresh cilantro if desired.
