3 tablespoons olive oil

1 medium onion, diced

4 cloves garlic, minced

1 bell pepper (red or green), diced

2 medium carrots, sliced

2 medium potatoes, diced

1 can (14 oz) diced tomatoes (with juices)

4 cups beef broth

2 tablespoons chili powder

1 tablespoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

1/2 teaspoon cayenne pepper (optional for heat)

Salt and pepper to taste

Sear the Beef: In a large pot, heat the olive oil over medium-high heat. Add the beef cubes in batches, searing them until browned on all sides. Remove the beef and set aside.

        Combine Ingredients: Return the browned beef to the pot. Then, add the can of diced tomatoes (with juices), beef broth, chili powder, cumin, smoked paprika, oregano, cayenne pepper (if using), and season with salt and pepper.

          Simmer: Bring the stew to a gentle boil, then reduce the heat to low. Cover and simmer for about 1.5 to 2 hours, or until the beef is tender and the flavors have fully developed. Stir occasionally and add more broth if needed for desired consistency.
