1 lb ground beef

1 cup diced ham

1 medium onion, chopped

2 cloves garlic, minced

4 cups corn (fresh, frozen, or canned)

4 medium potatoes, peeled and diced

4 cups chicken broth

1 cup heavy cream

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

In a large pot, heat the olive oil over medium-high heat. Add the chopped onion and minced garlic. Sauté until the onions are soft and translucent, about 3-4 minutes.

    Add the ground beef to the pot, breaking it apart with a wooden spoon. Cook until browned and no longer pink, about 5-6 minutes. Drain excess fat if necessary.

      Stir in the diced ham, followed by the corn and potatoes. Mix well to combine all ingredients.

        Pour in the chicken broth and bring the mixture to a boil. Add the dried thyme and smoked paprika for added flavor.

          Reduce the heat to a simmer and cover the pot. Cook for about 15-20 minutes, or until the potatoes are tender.

            Once the potatoes are cooked through, stir in the heavy cream. Allow the chowder to simmer for another 5-10 minutes, letting it thicken slightly. Season with salt and pepper to taste.

              Remove from heat and let sit for a couple of minutes before serving.
