1 lb ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

1/2 cup raisins

1/2 cup green olives, chopped

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon chili powder

Salt and pepper to taste

1 package of empanada dough discs (about 10-12 discs)

1 egg, beaten (for egg wash)

Olive oil for cooking

Instructions
 

In a large skillet over medium heat, add a drizzle of olive oil and sauté the chopped onion until translucent, about 3-4 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant.

    Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.

      Stir in the cumin, paprika, chili powder, salt, and pepper. Cook for an additional 2 minutes.

        Reduce the heat to low, then mix in the raisins and chopped olives. Cook for 2 more minutes, allowing the flavors to meld. Remove from heat and let the filling cool slightly.

          Preheat your oven to 400°F (200°C).

            On a clean surface, take one empanada dough disc and place about 1-2 tablespoons of the beef filling in the center.

              Fold the dough over to create a half-moon shape and press the edges together to seal. Use a fork to crimp the edges for extra security. Repeat with the remaining dough and filling.

                Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with the beaten egg for a golden finish.

                  Bake in the preheated oven for 20-25 minutes, or until the empanadas are golden brown and crispy.

                    Remove from the oven and let cool slightly before serving.
