6 pork sausages (your choice of spicy or herby)

600g potatoes (Yukon Gold or Russets), peeled and cubed

100ml milk

50g unsalted butter

2 large onions, thinly sliced

2 tablespoons olive oil

2 tablespoons all-purpose flour

500ml beef or vegetable stock

1 tablespoon Worcestershire sauce

Salt and pepper to taste

Fresh parsley for garnish (optional)

Prepare the Mash: Begin by placing the chopped potatoes in a large pot of salted water. Bring to a boil and cook for 15-20 minutes or until tender. Drain the water and return the potatoes to the pot.

    Make the Creamy Mash: Add the milk and butter to the drained potatoes. Mash until smooth and creamy. Season with salt and pepper to your liking. Set aside and keep warm.

      Cook the Sausages: Heat a large skillet over medium heat and add the sausages. Cook them for about 12-15 minutes, turning occasionally until they are golden brown and cooked through. Transfer the sausages to a plate and cover with foil to keep warm.

        Make the Onion Gravy: In the same skillet, add the olive oil and sliced onions. Sauté the onions over medium heat for about 10-15 minutes or until they are caramelized and golden brown.

          Thicken the Gravy: Sprinkle the flour over the caramelized onions and stir well to combine. Cook for 1-2 minutes to toast the flour slightly. Slowly pour in the beef or vegetable stock while stirring to prevent lumps. Add the Worcestershire sauce and bring to a simmer. Cook for about 5-10 minutes, stirring occasionally, until the sauce thickens. Season with salt and pepper to taste.

            Combine and Serve: Slice the sausages and serve them over a generous scoop of creamy mashed potatoes. Spoon the rich onion gravy over the top.
