4 high-quality pork sausages (or your preferred vegetarian sausages)

2 pounds of Yukon Gold potatoes, peeled and diced

1 cup whole milk

4 tablespoons unsalted butter

1 medium onion, finely chopped

1 cup beef or vegetable broth

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

Salt and pepper to taste

Fresh parsley, chopped for garnish

Prepare the Mashed Potatoes: Place the diced potatoes in a large pot and cover them with cold water. Add a pinch of salt and bring to a boil. Reduce heat and simmer until the potatoes are tender, about 15-20 minutes. Drain and return them to the pot.

    Mash the Potatoes: Add the butter and milk to the drained potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Keep warm on low heat while you prepare the sausages.

      Cook the Sausages: In a skillet over medium heat, cook the sausages until browned and cooked through, about 10-12 minutes, turning occasionally. Remove the sausages from the skillet and set aside.

        Make the Onion Gravy: In the same skillet, add the chopped onion and cook until softened and translucent, about 5 minutes. Pour in the beef or vegetable broth, Worcestershire sauce, and Dijon mustard, stirring to combine. Allow the gravy to simmer for 5-7 minutes until thickened. Season with salt and pepper to taste.
