6 premium pork sausages (or your choice of sausage)

4 large russet potatoes, peeled and chopped

1/2 cup milk

1/4 cup unsalted butter

Salt and pepper to taste

2 tablespoons olive oil

1 medium onion, finely sliced

2 cloves garlic, minced

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Potatoes: In a large pot, add the chopped potatoes and cover with cold water. Bring to a boil and cook for about 15-20 minutes or until tender. Drain and return to the pot.

    Mash the Potatoes: Add the milk and butter to the potatoes. Mash until smooth and creamy. Season with salt and pepper, and set aside.

      Cook the Sausages: In a large skillet, heat the olive oil over medium heat. Add the sausages and cook until browned all over (about 10-12 minutes). Remove the sausages from the skillet and set aside.

        Prepare the Onion Gravy: In the same skillet, add the sliced onion. Cook over medium heat until the onions are caramelized, about 8-10 minutes. Add in the minced garlic and cook for an additional minute.

          Add Flavor: Stir in the Worcestershire sauce, thyme, and a pinch of salt. If the gravy is too thick, you can add a splash of water or stock to reach your desired consistency.

            Combine: Return the sausages to the skillet, nestling them in the onion gravy. Allow to simmer together for about 5 minutes so the flavors meld.

              Serve: On a large plate, spoon a generous portion of the creamy mashed potatoes. Top with the sausages and pour the delicious onion gravy over the top.

                Garnish: Sprinkle freshly chopped parsley over the dish for added color and flavor.
