1 lb shrimp, peeled and deveined

1/2 cup cornstarch

1 cup panko breadcrumbs

2 eggs, beaten

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust for spice level)

Salt and pepper to taste

1/2 cup mayonnaise

2 tablespoons sriracha sauce (adjust to taste)

1 tablespoon honey

8 small corn or flour tortillas

1 cup shredded cabbage

1 avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Prepare the Shrimp: In a bowl, season the shrimp with garlic powder, paprika, cayenne, salt, and pepper. Let it marinate for about 15 minutes.

    Bread the Shrimp: Set up a breading station with three bowls: one with cornstarch, one with beaten eggs, and one with panko breadcrumbs.

      Coat the Shrimp: Dredge each shrimp first in cornstarch, then dip into the egg, and finally coat with panko breadcrumbs. Place the breaded shrimp on a plate.

        Fry the Shrimp: Heat 1/2 inch of vegetable oil in a large skillet over medium-high heat. Once hot, add the shrimp in batches, frying for about 2-3 minutes on each side until golden brown and crispy. Drain on paper towels.

          Make the Bang Bang Sauce: In a small bowl, mix together the mayonnaise, sriracha, and honey until well combined. Adjust the sriracha to your preferred spice level.

            Assemble the Tacos: Warm the tortillas in a dry skillet or microwave. On each tortilla, layer some shredded cabbage, crispy shrimp, and slices of avocado. Drizzle generously with the Bang Bang sauce.
