1 pound chicken breast, cut into bite-sized pieces

1 cup cornstarch

2 large eggs, beaten

1 cup panko breadcrumbs

1 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for spice preference)

1 tablespoon honey

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

2 green onions, finely sliced (for garnish)

In a large bowl, mix together mayonnaise, sweet chili sauce, sriracha, honey, garlic powder, onion powder, and paprika to create the Bang Bang sauce. Set aside.

    Prepare a dredging station: Place cornstarch in one bowl, beaten eggs in another, and panko breadcrumbs in a third bowl.

      Dip each chicken piece first into the cornstarch, ensuring it's fully coated. Shake off any excess.

        Next, dip the coated chicken into the beaten eggs, allowing any excess to drip off before transferring it to the panko breadcrumbs. Press gently to ensure the breadcrumbs stick.

          Heat oil in a deep skillet over medium-high heat (about 350°F/175°C). Fry the chicken in batches, cooking for about 5-6 minutes or until golden brown and cooked through. Use a slotted spoon to remove the chicken and drain on paper towels.

            Once all the chicken is fried, toss it in half of the Bang Bang sauce until evenly coated. Reserve the remaining sauce for drizzling or dipping.

              Serve the Bang Bang Chicken on a plate, drizzled with some extra sauce, and garnish with sliced green onions.
