1 cup unsweetened Greek yogurt

1 cup ripe bananas, mashed (about 2 medium bananas)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 cup graham cracker crumbs

6 small flour tortillas

2 tablespoons melted butter

1/4 cup mini marshmallows (optional)

Fresh banana slices and crushed graham crackers for garnish

Instructions
 

In a mixing bowl, combine the Greek yogurt, mashed bananas, honey (or maple syrup), vanilla extract, and ground cinnamon. Stir until well blended and creamy.

    In another bowl, place the graham cracker crumbs. Take the small flour tortillas and brush one side with melted butter, then coat that side with the graham cracker crumbs.

      Heat a skillet over medium heat. Once hot, place the tortillas crumb-side down in the skillet and toast for about 1-2 minutes or until golden and crispy. Flip and toast the other side for an additional minute. Set aside to cool slightly.

        To assemble the tacos, take a toasted tortilla and spoon a generous amount of the banana pudding mixture into the center.

          If using, sprinkle mini marshmallows over the pudding mix.

            Fold the tortilla like a taco and serve immediately.

              Garnish with fresh banana slices and additional crushed graham crackers on top for added crunch.
