4 ripe bananas, sliced

1 cup vanilla wafers

2 cups whole milk

1/2 cup granulated sugar

1/3 cup cornstarch

1 teaspoon vanilla extract

1/4 teaspoon salt

3 large egg yolks

1 cup heavy whipping cream

2 tablespoons powdered sugar

Fresh mint leaves for garnish (optional)

Instructions
 

In a medium saucepan, whisk together the sugar, cornstarch, and salt.

    Gradually add the whole milk while continuously whisking to combine. Place the mixture over medium heat.

      In a small bowl, whisk the egg yolks until smooth. Once the milk mixture begins to bubble, take a ladleful and slowly pour it into the egg yolks while whisking. This will temper the egg yolks.

        Pour the tempered egg mixture back into the saucepan, stirring constantly. Cook for an additional 3-5 minutes until the mixture thickens to a pudding consistency.

          Remove from heat and stir in the vanilla extract. Let the pudding cool slightly.

            In an 8x8-inch dish, layer half of the vanilla wafers, half of the sliced bananas, and half of the pudding.

              Repeat the layering with the remaining wafers, bananas, and pudding.

                Cover with plastic wrap and refrigerate for at least 3 hours or until set.

                  Just before serving, whip the heavy cream with powdered sugar until soft peaks form. Spread or pipe the whipped cream over the top of the pudding.

                    Garnish with fresh mint leaves if desired.
