1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 cups cream cheese, softened

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

2 ripe bananas, mashed

1 teaspoon lemon juice

1 cup sour cream

¼ cup brown sugar

1 teaspoon cinnamon

1 cup whipped cream (for topping)

Banana slices and mint leaves (for garnish)

Instructions
 

Preheat your oven to 325°F (160°C).

    In a mixing bowl, combine the graham cracker crumbs and melted butter until evenly mixed. Press this mixture firmly into the bottom of a 9-inch springform pan to create the crust. Bake for 8-10 minutes, then remove from the oven and cool.

      While the crust cools, prepare the cheesecake filling. In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy.

        Add the eggs one at a time, mixing well after each addition. Then blend in the vanilla extract, mashed bananas, and lemon juice until fully incorporated.

          In a separate small bowl, combine the sour cream, brown sugar, and cinnamon. Gently fold this mixture into the cheesecake batter without overmixing.

            Pour the cheesecake filling over the cooled crust in the springform pan.

              Bake in the preheated oven for about 60-70 minutes, or until the center is set and slightly jiggly.

                Once done, turn off the oven and leave the cheesecake inside for an additional hour to cool slowly.

                  Remove the cheesecake from the oven and let it cool completely at room temperature before refrigerating for at least 4 hours (or overnight).
