1 pound baby carrots, peeled

3 tablespoons balsamic vinegar

2 tablespoons olive oil

1 tablespoon honey or maple syrup

1 teaspoon garlic powder

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the balsamic vinegar, olive oil, honey (or maple syrup), garlic powder, dried thyme, salt, and pepper. Whisk until well blended.

      Add the baby carrots to the bowl and toss until they are evenly coated with the balsamic mixture.

        Spread the coated carrots in a single layer on a baking sheet lined with parchment paper for easy cleanup.

          Roast the carrots in the preheated oven for about 20-25 minutes, or until they are tender and slightly caramelized, tossing halfway through for even cooking.

            Once done, remove the carrots from the oven and let them cool slightly.

              Transfer roasted carrots to a serving platter and garnish with freshly chopped parsley before serving.
