2 salmon fillets (6 oz each)

1 bunch of fresh asparagus, trimmed

2 tablespoons olive oil

1 lemon (zested and juiced)

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and black pepper to taste

Lemon slices for garnish

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    Cut two large pieces of aluminum foil, enough to wrap the salmon and asparagus completely without tearing.

      In a small bowl, whisk together the olive oil, lemon zest, lemon juice, minced garlic, thyme, oregano, salt, and pepper.

        Place the salmon fillets in the center of each piece of foil, skin-side down.

          Arrange the asparagus around the salmon, and drizzle half of the herb mixture over the salmon and asparagus.

            Fold the sides of the foil up over the salmon and asparagus, creating a tightly sealed packet.

              Place the foil packets on a baking sheet and bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

                Carefully open the foil packets (beware of steam), and garnish with fresh lemon slices and parsley if desired.
