2 cups cooked chicken, shredded

1 cup black beans, drained and rinsed

1 cup corn, frozen or canned

1 cup diced tomatoes (fresh or canned)

1 cup shredded cheese (cheddar or Mexican blend)

1 teaspoon cumin

1 teaspoon chili powder

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

4 large flour tortillas

2 tablespoons olive oil

Fresh cilantro, for garnish

Sour cream and salsa, for serving

Instructions
 

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    In a large bowl, combine the shredded chicken, black beans, corn, diced tomatoes, half of the cheese, cumin, chili powder, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly incorporated.

      Place a tortilla on a clean surface. Spoon about 1/2 cup of the chicken mixture onto the center of the tortilla.

        Fold the tortilla sides over the filling, then roll from the bottom up to form a wrap. Place the chimichanga seam-side down on the prepared baking sheet. Repeat with remaining tortillas and filling.

          Brush the tops of the chimichangas with olive oil to help them crisp in the oven.

            Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy. During the last 5 minutes of baking, sprinkle the remaining cheese on top of the chimichangas.

              Once baked, remove from the oven and let cool for a few minutes before serving. Garnish with fresh cilantro.

                Serve with sour cream and salsa on the side for dipping.
