Ingredients
2
fillets
salmon (about 6 oz each)
4
oz
Boursin cheese (any flavor)
1
tablespoon
olive oil
1
tablespoon
fresh dill, chopped
1
tablespoon
lemon juice
to taste
salt and pepper
optional
lemon wedges for serving
Instructions
Preheat your oven to 375°F (190°C).
In a small bowl, mix the Boursin cheese, chopped dill, and lemon juice together until well combined.
Line a baking dish with parchment paper or lightly grease it with olive oil.
Place the salmon fillets skin-side down in the prepared baking dish.
Drizzle the olive oil over the salmon and season with salt and pepper.
Gently spread the Boursin cheese mixture over the top of each salmon fillet, ensuring an even layer.
Bake the salmon in the preheated oven for 15-18 minutes, or until the salmon is cooked through and flakes easily with a fork.
Remove the salmon from the oven and allow it to cool for a couple of minutes.
Serve warm, garnished with lemon wedges if desired.
Notes
Plate the salmon on a bed of arugula or mixed greens for a pop of color, and drizzle a little extra lemon juice over the top for brightness.
