2 medium-sized apples (Granny Smith or Honeycrisp), peeled and diced

1 cup all-purpose flour

2 tablespoons granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup milk

1/4 cup unsweetened applesauce

1 large egg

1 teaspoon vanilla extract

1 cup powdered sugar (for glaze)

2 tablespoons milk (for glaze)

Oil spray for greasing

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Lightly spray with oil to prevent sticking.

    In a medium bowl, combine the diced apples with 1 tablespoon of sugar and set aside. This helps to release the juices from the apples.

      In a separate large bowl, whisk together the flour, remaining sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well-combined.

        In another bowl, mix the milk, applesauce, egg, and vanilla extract until smooth.

          Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix. Gently fold in the diced apples.

            Use a spoon or small ice cream scoop to drop heaping tablespoons of the batter onto the prepared baking sheet, leaving space between each fritter.

              Bake in the preheated oven for 12-15 minutes or until golden brown. Keep an eye on them, as baking time might vary depending on your oven.

                While the fritters are baking, prepare the glaze. In a small bowl, whisk together the powdered sugar and milk until smooth and pourable. Adjust the milk if necessary to reach your desired consistency.
