1 lb ground beef

1/2 lb ground pork

1 cup breadcrumbs

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup mushrooms, diced (preferably cremini or shiitake)

1/2 cup cooked bacon, chopped

1 cup Swiss cheese, shredded

2 large eggs

1/4 cup milk

2 tablespoons Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup ketchup (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.

    In a skillet over medium heat, sauté the chopped onion and minced garlic until they’re translucent, about 3-4 minutes. Add the diced mushrooms and cook until they are soft and any liquid has evaporated, about 5 minutes. Set aside to cool.

      In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, and cooked bacon.

        Add the sautéed onion, garlic, and mushroom mixture to the meat mixture, followed by shredded Swiss cheese, eggs, milk, Worcestershire sauce, thyme, salt, and pepper.

          Mix everything together until well combined. Be careful not to overmix, as this can make the meatloaf tough.

            Form the meat mixture into a loaf shape and place it in the prepared loaf pan.

              Spread the ketchup evenly over the top of the meatloaf for added flavor and moisture.

                Bake in the preheated oven for 1 hour or until the internal temperature reaches 160°F (70°C).

                  Once done, let the meatloaf rest for 10 minutes before slicing to ensure it holds its shape.

                    Garnish with chopped parsley before serving.
